Sausage was another common way to preserve all kinds of meat, from pork, beef, to even chicken. This is a basic sausage recipe found in many 18th century cookbooks as a base. Feel free to add other herbs or spices to this mix, or add some maple sugar or brown sugar for a sweeter breakfast sausage.
